A salad that I’ve taken to people’s homes as potluck food:
Garbanzos, minced red onion, diced cucumber, minced parsley, lemon juice, ev olive oil, and s+p. (Diced red pepper is a nice addition.)
Optional: Serve on chopped romaine (or use a whole romaine leaf for each person.)

Basically, tabuleh with chickpeas instead of cous cous. I may have to try it at my next party.
